This past Sunday, my roomates and I had a chicken family dinner. Today, I made soup with the bones.
We stuffed the chicken with fresh thyme and two garlic cloves, smothered the chicken in butter, sea salt and pepper, and then cooked in white wine.
WHAT YOU NEED:
Chicken bones
Garlic
Fresh Thyme
Carrots
Turnip
Cabbage
Rice noodles
Spices
Vegetable broth cubes
In a large pot, boil chicken bones, garlic cloves and fresh thyme for about 2 hours. (This will really capture the flavor of the chicken)
Drain broth into a new pot, add vegetable broth cubes cubes (two or three) some spices (whatever you like, I added parsely, basil, and thyme) Add a friendly amount of salt and pepper to enhance the flavor.
Add chopped vegetables into pot and boil until soft. This usually takes about 20 minutes.
Last, add your rice noodles, (these only take one minute to cook once water is boiling)
Pour some into a bowl and enjoy your meal!
TIP - This is a really tastey soup to eat with grilled avacado and mozzerella cheese sandwhiches.

Raspberry Chicken and Fried Vegetables with Brie
I am back with a delicious Chicken and Vegetable dinner with raspberries and brie cheese.
WHAT YOU NEED:
Chicken Breast
Fresh Raspberries
Raspberry Jam
Anise
Carrots
Brocolli
Kale
Garlic
Brie Cheese
CHICKEN -
Add some olive oil to a frying pan and fry your chicken breast on a medium low temperature.
I like to add some spices to my chicken. For this I added parsley flakes, basil, and pepper. This is optional. I cut some slices in the chicken breast to help it cook and to add the flavor throughout the chicken.
When the chicken is fully cooked, add a quarter of a cup of raspberry jam to the frying pan. This should turn the jam into more of a liquid.
Once the chicken is on a plate, pour the rest of the jam over top of the breast, add some fresh raspberries.
VEGETABLES -
In a seperate frying pan, fry up your vegetables in some olive oil. Add salt and pepper.
Fry until they are slightly crispy and add brie cheese into the frying pan, Continue to fry and stir until cheese is melted. Add to your plate and you're done!
Enjoy!
